Tapenade

Ingredients

- Black olives: Greek way (200 g)
- Olive oil (3 Tbs)
- Lemon juice (1-2 Tbs)
- Garlic (1-2 heads)
- Mustard (1 Tsp)
- Harissa (1/2 Tsp)
Optional:
- Fig jam (20-50g)

Instructions

1. Wash the olives and let them in the water half an hour to reduce the saltiness.
2. Put everything in the mixer and grind finely. It can take some time depending on the quantity you are making and the size of the mixer.
3. Add a little bit of fig jam depending of your taste.
VOILA !

Notes

- The Harissa is here to bring the kick and salty flavour of the anchovy in the original tapenade, and it works very well … but don't put too much. I recommend you to use a little mixer/grinder and fill it almost completely. It will be far easier to obtain a fine tapenade paste.
