Red lentils and carrots soup

Ingredients

- Carrots (500 g)
- Red lentils (200 g)
- Water (1.5 L)
- Olive oil (2 Tbs)
- Onion flakes (1 Tbs)
- Garlic flakes (1 tsp)
- Cumin (1 tsp)
- Ginger (1 tsp / 1 cm)
- Salt (1 tsp)
- Pepper (1/4 tsp)

Instructions

1. Grate the carrots and cut it in 1 cm pieces.
2. Put everything in 1.5 L of boiling water, cover and let cook on medium/low fire during 45 minutes.
3. You can add water if it became too thick but no more than 0.5 L.
4. Let it cool a bit and blend everything with the fresh coriander.

Notes

You can add a vegetable stock cube in the boiling water depending on you taste.
