Red curry

- Sweet potato (2)
- Red lentils (300 g)
- Onions (2)
- Red curry paste (1-2 Tbs)
- Coconut milk or cream (~500 ml)
- Peanut butter (1 Tbs)
- Garlic (1 clove)
- Cumin (1 tsp)
- Fresh ginger (1 tsp / 1 cm)
- Vegetable stock (1 cube)
- Olive oil (1 Tbs)
- 1L of boiling water

Instructions

1. Peel and cut the sweet potatoes in 1 cm dice. Cut the onions in little dice.
2. In a big cooking pot. Stir fry the onion with the olive oil. Add the garlic and the red curry paste a little before the onion is cooked.
3. Add all the other ingredients beginning with the boiling water and coconut milk/cream. Cover the cooking pot and let it cook on medium-low fire during 45 minutes. Stir regularly and if it became too thick add boiling water (no more than 1L).

Notes

You can add fresh coriander on top for serving.
