Poutine
Ingredients
Fries: - 5-6 potatoes (Medium size) - Olive Oil (3 Tbs) - Salt (1 tsp) Cheese: - "Squick-Squick Cheese" alternative (cf. notes) * (200 g) Topping (optional): - Green Peppers (2) - Mushroom (300 g) - Onion (200 g) - Tamari (1 Tbs) - Olive Oil (1 Tbs) Sauce: - Shallot (80 g) - Margarine (50 g) - Garlic (2 cloves) - Barbecue sauce (80 g) - Mustard (20 g) - Miso brown (30 g) - Vegetable stock (1/2 cube) - Nutritional yeast (15 g) - Water (0.5 L) - Tamari (2 Tbs) - Cider vinegar (1 tsp) - Worcester sauce (1 tsp) - Pepper (1/2 tsp) - Corn Starch (30 g) in cold water
Instructions
Fries: 1. Cut the potatoes in fries shape. 2. Coat them with olive oil. 3. Cook in the oven (220 °C , 30-40 min). Topping (optional): 1. Fry the mushrooms and onions in with olive oil. 2. Add the Tamari sauce 2-3 minutes before the end. Sauce: 1. Melt the margarine, shallots and garlic on medium fire. 2. Add the water with vegetable stock. 3. Add the BBQ sauce, the miso, the tamari, the mustard, the nutritional yeast, the cider vinegar, the pepper and the vegan Worcester. Stir until it boils, then reduce on low fire and let it cook 5 minutes. 4. Filter the shallots and the garlic and put the liquid back in the cooking pot. 5. Add the corn starch diluted in 30g cold water and it cook on medium fire until the consistency is right (not to liquid not to thick, not burned). For Serving: 1. Add the fries, the vegan cheese, the sauce then the toping.
Notes
- *Good Squick-Squick Cheese alternative (Smocked German German Style - Sheese). - You can also cut the potatoes in 1 cm dices and fry them in sunflower oil in a fry pan. - To make it simpler there is vegan gravy for poutine available on the market. You just have to put it in water and let it cook on medium fire until right consistency. - You can add peppers with the mushroom and onion for the topping. Back
