Banana curry

- Rice (300 g)
- Banana (6)
- Cashew nuts (Roughly chopped) (50 g)
- Olive oil (1 Tbs)
- Red onion (1 large)
- Apple (1)
- Curry powder (2 Tbs)
- Red Chili (1)
- Cumin (1 tsp)
- Golden Syrup (1 Tbs)
- Lemon (1)
- Fresh coriander (25g)
Optional:
- Dairy free yogurt (2 Tbs)

Instructions

1. Cook the rice according to the pack instructions and set aside.
2. Roast the nuts in a frying pan with 1/2 Tbs of the curry powder over a medium heat for 2-3 mins till golden. Set aside.
3. Finely chop the onion and apple. Cut the bananas in 1 cm chunks.
4. Fry the onion, apple and chilli in olive oil for 8 mins over a medium heat until starting to soften.
5. Add the banana, remaining curry powder, ground cumin, golden syrup and lemon zest.
6. Fry for 2 mins until caramelised, taking care not to mash the banana.
7. Stir through the coriander, saving a little to garnish, and season.
8. Sprinkle the toasted nuts and remaining coriander over the curry, then serve with the rice.
9. Place the yogurt alternative and lemon wedges on the side.
